
Wraps are quick and easy to make and this chicken salad wrap is a delicious alternative to a sandwich or roll.
ONE SERVE
INGREDIENTS:
1/4 cup fresh parsley
2 teaspoons fresh mint, chopped
Cherry tomatoes, halved
1 spring onion
2 teaspoons lemon juice
1 teaspoon olive oil
1 tablespoon mayonnaise
1 wholemeal wrap
80g roast chicken, shredded
HOW TO:
- In a small bowl combine the fresh mint, parsley, tomatoes, spring onion, lemon juice and olive oil.
- Take the wholemeal wrap and spread with mayonnaise.
- Top with tomato mixture and shredded chicken.
- Roll up the wrap to enclose the filling. Enjoy!
